Breakfast Skillet

(One of our family’s favorites.)

Fry 6 pieces of bacon and set aside.

2 T. bacon drippings
6 C. hashbrowns
3/4 C. chopped green peppers
1/2 C. chopped onion
1 t. salt
1/4 t. pepper
Cook until hash browns are browned.

Make wells in potato mixture and add eggs.
Cover and cook on low until eggs are done.
Sprinkle with 6 pieces of crumbled bacon and
1/2 C. shredded cheese.

(use more or less of any of the above ingredients to your taste – it always turns out good!)
