Raised Donuts (from Mrs. George Mitchell)

1 pkg. yeast
¼ cup warm water
¾ cup lukewarm milk
¼ cup sugar
1 tsp. salt
1 egg
¼ cup softened shortening
3 ½ to 3 ¾ cups flour

Soften yeast in warm water.  Mix milk, sugar, and salt.  Add to yeast mixture.  Stir until dissolved.  Stir in egg, shortening, and half of the flour. Mix.   Add remaining flour.  Knead on lightly floured surface.  Place in a greased bowl.  Let rise until double.  Punch down.  Let rise again until doubled.  Roll dough out 1/3 inch thick.  Cut out doughnuts.  Let rise 30 to 40 minutes.  Leave uncovered so crust will form.  Fry in deep hot fat 375 degrees (400-420).  Makes 18.  For sugared doughnuts, place sugar and donuts in paper sack and shake well.  Or make a thin powdered sugar icing-1/2 chocolate and ½ vanilla.  Dip each doughnut on each side and place on waxed paper.  Delicious when made-will not keep well.
