1 ¾ cup sugar – (I use 1 ½ cups sugar)
½ cup margarine – (Could use applesauce)
2 eggs
2 ½ cups flour
2 ½ tsp. soda
2 ½ tsp. salt
2 tsp. vanilla
1 ¾ cup buttermilk – (Or 1 ¾ cup milk and 3 tsp. vinegar)
1 cup boiling water
1 cup 100% bran – (Wheat bran unprocessed bran)
¾ cup raisins or more
2 cups All Bran cereal
Cream together sugar and margarine. Add 2 eggs. Beat well. Add flour, soda, salt, and buttermilk. Mix till smooth. Set aside.
Combine boiling water and bran. Blend into batter. Stir in raisins (Could use nuts if so desired). Stir in All Bran, and vanilla. Refrigerate in a tightly covered container for 4 hours or overnight. Do not stir batter when filling muffin tins. Fill muffin tins ¾ full. Batter will be very thick. Bake at 375 degrees for 20minutes. I bake at 350 degrees – watching carefully.
