Grilled Hot Wings

Start with 15 meaty wings.

Seperate the two large sections, cut off and discard the tips.

Brine wings with 1 qt. of water, 3/4 cup of kosher salt and 3/4 cup of sugar for 1 1/2 hours in the refrigerator. This will make the skin crisp up while cooking.

Rinse the wings well, and dry with paper towels. Sprinkle with fresh ground pepper and your favorite meat rub.

Preheat a gas grill on high. Optional: add a smoker box full of soaked wood chips to your grill.

When the grill is ready, turn the burners down to medium. Place the wings on the racks away from the chips box. Cover and cook for about 15 minutes, turning once.

Turn burners to high, and cook for another 10 or 15 minutes, turning constantly, to keep from burning.

Some time during the process, melt 3/4 cup of butter and mix with 4 oz. of hot sauce. Keep warm. When wings are done, coat the wings in this mixture, shaking off the excess.
