Chiffon Cake

Sift together

  • 2 cups flour
  • 1 1/2 cup sugar
  • 3 teaspoons baking powder
  • 1 teaspoon salt

make a well and add

  • 1/2 cup salad oil
  • 7 egg yolks unbeaten
  • 3/4 cup cold water
  • 2 teaspoons vanilla
  • grated rind of 1 lemon

beat until smooth.

Mix

  • 1 cup egg whites
  • 1/2 teaspoon cream of tartar

beat until stiff

Pour egg yolk mixture over egg whites.

Bake in ungreased pan at 325 degrees for 55 minutes, then at 350 degrees for 10 minutes.
