Caramel Corn (Susie Rucker)

  • 3 bags generic corn puffs
  • 2 cups brown sugar
  • 1/2 cup syrup–white
  • 1 stick butter or 1/2 butter and 1/2 margarine
  • 1/2 cup white sugar
  • 1 tsp salt
  • 1 tsp vanilla
  • 1 tsp baking powder

Bring to a boil: brown sugar, syrup, butter, and sugar. Cook for 5 minutes, then take off heat and add salt, vanilla, and baking powder. Pour over corn puffs in a large roaster. Bake at 250 degrees for 45 minutes, stirring every 15 minutes.
