Coconut Macaroon Pie

Filling

  • 1 1/2 cup sugar
  • 2 eggs
  • 1/4 cup flour
  • 1 1/2 cup coconut
  • 1/2 teaspoon salt
  • 1/2 cup melted butter
  • 1/2 cup milk
  • 9 inch pie shell unbaked

Beat egg, sugar, and salt until lemon colored.

Add butter and flour, then blend well.Add milk.

Fold in the coconut and pour into shell.

Cook in a slow oven at 325.

Icing

  • 2 egg whites
  • 1 1/4 cup white syrup
  • pinch of salt
  • vanilla

Beat the egg whites.
Bring the white syrup, salt, and vanilla to a boil.
Add to the egg whites and beat.
