Mom’s Coconut Cookies

  • 1/2 cup softened margarine
  • 2 cups flour
  • 1 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 cup packed Brown sugar
  • 18 teaspoon salt
  • 1 egg
  • 1 cup flaked coconut
  • 1 1/2 tablespoons vanilla

In a mixing bowl cream butter and sugar. Beat in egg and vanilla, then combine flour, baking powder, and salt. Gradually add to creamed mixture. Stir in coconut. Shape into 2 3 1/2 inch rolls. Wrap each in plastic wrap. Refrigerate for two hours or until firm. Unwrap and cut into 1/8 inch thick slices placed two inches apart on ungreased baking sheet and bake at 425 degrees for 5 to 7 minutes or until lightly browned. Remove to wire racks to cool.
