- 7 pounds of large cucumbers
- 2 cups lime
- 2 gallons water
- 2 quarts vinegar
- 4 1/2 lbs sugar
- 1 teaspoon celery seed
- 1 teaspoon whole cloves
- 1 teaspoon turmeric
- 1 teaspoon mixed pickling spice
- 1 1/2 tablespoon salt
Slice or cut in chunks large cucumbers, remove seeds and peel. Dissolve lime well in water. Cover cucumbers with lime and water solution.
Let soak 24 hours in lime water, then rinse well and soak three hours longer in clear water. Drain well and cover with solution.
Let cucumbers soak in solution overnight. Boil for 30 minutes in solution or until pickles start to look clear. Pack hot in jars and seal.
