Apple Cider Bundt Cake with Maple Icing

Ingredients:
1 Box cake mix – you will just use the dry cake mix it can be white, yellow or spice
3/4 cup apple cider – see my homemade apple cider recipe
1/4 cup water
1/4 teaspoon cinnamon
1/2 cup apple sauce
1 tablespoon brown sugar
1 teaspoon vanilla
3 eggs
ICING
2 Tablespoons unsalted butter
1/3 cup maple syrup
1 cup confectioners sugar – sifted
1/8 teaspoon maple extract

Directions:
Pre heat oven to 350 degrees.
In a large mixing bowl, beat the dry cake mix, apple cider, apple sauce, water, and eggs.
Add in cinnamon, brown sugar and vanilla to the cake mix batter.
Pour the mixture into a well-greased bundt pan, Grease sides and bottom of pan and flour lightly (I use a paper towel with lots of butter it to get into the cracks of the bundt pan)
Place bundt pan on center rack and bake for 45 minutes. Test with a toothpick by sticking into the middle of the cake, if it comes out clean it is ready. Remove from heat and allow to cool on a wire rack for 20 minutes.
In a small saucepan over low heat, melt the butter and maple syrup together, whisking occasionally. Once the butter has melted, remove from heat and whisk in the sifted confectioners’ sugar and maple extract. Taste. Add a pinch of salt if desired. Cool for 2-3 minutes. The icing quickly thickens, so feel free to place it back over heat as you drizzle over bundt cake.
