Bob in Georgia’s ‘Dip’ (Eastern North Carolina Style Sauce)
Note: this is almost exactly the same as Ken Rogers on makes, although he often used d cider vinegar.
2 cups vinegar
2 tablespoons salt
1 tablespoon red pepper flakes
(black pepper also if you desire)
Gary’s notes:
- I always add 1/2 tablespoon fresh ground black pepper.
In Georgia and the Carolinas this type of ‘sauce’ is called Dip and is used
more like a condiment, think Tabasco, then traditional BBQ sauce.

When I was at Bob’s he used organic unfiltered cider vinegar and whole dried
cayenne or Tabasco type peppers.

When Bob make ‘Dip’ at Kit’s he used a teaspoon of sugar. Said it rounded
out the flavor.
