2 ½ cups sugar
¾ cup white syrup
¼ cup hot water
2 egg whites, beaten
Pinch of salt
1 tsp. vanilla
Boil sugar, syrup, and hot water to 248 on candy thermometer.
Pour 2/3 of above syrup over 2 well-beaten egg whites. Add a pinch of salt, and vanilla. Put the other 1/3 syrup back on stove and let come to boiling point. Slowly pour over fist mixture. Stir until cool and thick. Drop by teaspoon on buttered platter.
Add a lot of walnuts to make extra good.
