Raw Apple Cake

2 cups sugar
½ cups butter
2 eggs
2 cups flour
1 tsp. nutmeg
1 tsp. cinnamon
2 tsp. baking soda
½ tsp. salt
1-2 tsp. vanilla
4 cups raw apples, diced
1 cup or more, black walnutsSauce for topping
1 cup boiling water
1 cup sugar
1 T. cornstarch
1 T. butter
1 tsp. vanilla

Beat till creamy, the sugar, eggs, and butter.  Set aside
Mix flour, nutmeg, cinnamon, soda, nuts and apples together.  Add vanilla and the creamy sugar/butter/eggs mixture.  Stir by hand.  Put in greased and floured 13 x 9 pan.  Bake 350 degrees approximately 45 minutes.  Pour sauce on hot cake.

For sauce:  Mix sugar and cornstarch together.  Place in boiling water on stove, add butter and sugar mixture.  Stirring constantly, cook until clear.  Add vanilla.  Mix.  Pour over hot cake; make sure to cover all area of cake.  If desired, top with cool whip or vanilla ice cream.
