Or scalloped potatoes as I make them
- 8 cups of cubed potatoes
- ½ cup of milk
- ¼ cup of margarine
- 1 lb processed american cheese cubed
- 2 Tbsp flour
- ¾ tsp salt
- Minced parsley
- 1/8 tsp pepper
In a large saucepan cook potatoes in boiling water until done. Drain. Placed in a greased 2½ qt baking dish. In a sauce pan, melt butter. Add flour, salt, and pepper. Stir to form a smooth paste. Gradually add milk, stirring gradually. Bring to a boil. Boil and stir a minute. Add cheese. Stir just until melted. Pour over potatoes. Bake 350 for 45-50 minutes until bubbly. Sprinkle with parsley. Yields 12 servings.
