- 16 cups cucumber thinly sliced
- 1 cup onion thinly sliced
- 3 tbsp salt
- 2 cups vinegar
- ½ tsp powdered alum
- 4 cups sugar
- 1 tsp mustard seed
- 1 tsp celery and 1 tsp turmeric
Combine cucumbers, onions, and salt. Set aside for 3 hours. Rinse and drain well. Mix together turmeric and alum and mustard seed. Set aside for 3 hours, stirring often to dissolve sugar. Combine water and cucumbers. Refrigerate for several weeks (I have used an artificial sweetner in place of sugar and they turn out well with very few calories).
