1 1/3 cups sifted cake flour
1 cup plus 2 T. sugar
2 cups egg whites
2 tsp. cream of tartar
1/3 tsp. salt
2 tsp. vanilla
1 ¼ cups sugar
Sift flour and sugar together. Beat egg whites, cream of tartar, salt, and vanilla till foamy. Use a large bowl. Gradually add sugar, beating till stiff peaks are formed. Sift in flour and sugar mixture gradually; folding gently till all flour and sugar is blended with egg mixture. Put in square angel cake pan. Cut through batter with a knife to eliminate all air bubbles. Bake in 350 degree oven for one hour or till cake tests done. Invert and let cool.
