Aunt Abby’s Brisket

1 3-3½ pound fresh beef brisket
½ cup brown sugar
1 envelope regular onion soup (not instant)
½ tsp. garlic powder
¾ cup catsup

Line a large roasting pan with heavy foil. Place brisket in pan; sprinkle the sugar, soup mix, and garlic powder over the brisket. Drizzle catsup over all. Fold ends of foil over brisket sealing securely leaving air space.

Bake 325 degrees for 3 to 3½ hours or till the brisket is tender. Transfer brisket to platter and slice. Skim fat from sauce. Serve immediately with brisket slices.

(To make ahead and reheat- after cooking, cool, and slice brisket. Skim fat from sauce. Store brisket and sauce in separate storage containers. Chill meant and sauce up to two days. To serve: transfer meat to an 8 x 8x 2 baking dish. Pour sauce over all. Bake covered in 325-degree oven 25-30 minutes.)
