Makes 1 pie
- 2 pie crusts
- 2 cups raisins
- ¾ – 1 cup sugar
- 1 tablespoon lemon juice
- 2 – 3 tablespoons flour
- 2 cups water
- pinch of salt
- 1 tablespoon butter
- Vanilla ice cream or freshly whipped cream
- Preheat oven to 350 degrees.
- Mix all ingredients (except for pie crusts) in a medium saucepan. Heat through on medium high heat and reduce to a simmer. Simmer for 5 – 10 minutes until mixture thickens. Allow to cool slightly.
- Pour raisin filling into a pastry lined pie pan. Cut the second pie crust into lattice work and place over the pie pan. Bake at 350 degrees for 30 – 40 minutes until the pie crust is golden brown.
- Serve with fresh whipped cream or vanilla ice cream on the side.
