Raisin Pie

Makes 1 pie

  • 2 pie crusts
  • 2 cups raisins
  • ¾ – 1 cup sugar
  • 1 tablespoon lemon juice
  • 2 – 3 tablespoons flour
  • 2 cups water
  • pinch of salt
  • 1 tablespoon butter
  • Vanilla ice cream or freshly whipped cream
  1. Preheat oven to 350 degrees.
  2. Mix all ingredients (except for pie crusts) in a medium saucepan. Heat through on medium high heat and reduce to a simmer. Simmer for 5 – 10 minutes until mixture thickens. Allow to cool slightly.
  3. Pour raisin filling into a pastry lined pie pan. Cut the second pie crust into lattice work and place over the pie pan. Bake at 350 degrees for 30 – 40 minutes until the pie crust is golden brown.
  4. Serve with fresh whipped cream or vanilla ice cream on the side.
