Note: Grandma Snow gave me this recipe when I wanted something nice to take to a baby shower where soup would be served. Aunt Janis helped find the copy when I misplaced it.
Greek Noodle Soup
2 tablespoons oil
1 medium onion, chopped
1 clove garlic or 1/2 teaspoon garlic powder
6 bouillon cubes
6 cups water
6 cups milk
2 (10 oz.) packages frozen spinach – chopped or whole
8 oz. noodles
2 teaspoons salt
1/2 lb. cheddar cheese
1/2 lb. swiss cheese
Sauté onion and chopped garlic in oil a few minutes–don’t brown.
Add water and bouillon cubes. Mix. Add spinach and cook until thawed.
Add Noodles – Cook until tender. Add milk and cheese. Heat through but do not boil.
Sprinkle with paprika if desired. Serve.
