(This is from the Quakers Oatmeal package. Sometimes Mother would put hickory nuts, black walnuts, pecans or chocolate chips in the cookies.)
1 cup (2 sticks) margarine, butter or shortening
1 cup brown sugar
½ cup white sugar
2 eggs
1 tsp. vanilla
1½ cups flour
1 tsp. soda
½ tsp. salt
3 cups quick or old fashioned oats, uncooked
1 cup raisins
(I would also use ½ cup or more of nuts)
Heat oven to 350.
Beat together margarine and sugars till creamy.
Add eggs, and vanilla. Beat well.
Add combined flour, soda, and salt. Mix well.
Stir in oats, raisins, and nuts-if desired. Mix well.
Drop by rounded tablespoonfuls onto ungreased cookie sheet.
Bake 10 to 12 minutes or till golden brown.
Cool slightly on cookies sheet, than remove to wire rack.
Makes approximately 4 dozen.
For bar cookies: Bake 30-35 minutes in ungreased 13 x 9 inch baking pan.
