Delicate Mary Ann Cake

(One of Dad’s Favorites)
2 egg yolks
½ cup sugar
½ cup flour
1/3 tsp. baking powder
¼ tsp. salt
2 egg whites
2 T. cold water
¾ tsp. vanilla
¼ tsp. almond (I use 1 tsp. vanilla, and ½ tsp. lemon)
¼ tsp. cream of tartar

Beat egg whites and cream of tartar till stiff.  Set aside.  Beat egg yolks till thick and lemon colored.  Add sugar.  On low speed of mixer, add flour, baking powder and salt – alternately with water and flavoring.  Gradually fold in beaten egg whites into flour batter.  Bake 350 degrees for 20-25 minutes.  Best-eaten warm from oven or cold with strawberries and ice cream!!!
