Dona Foltz
- 2 cups cooked pinto beans
- 1/2 cup bacon drippings
- 1/4 lb sharp cheddar cheese, shredded
- 1/4 cup fine chopped green onions & tops
Mach beans, or put through a food mill. Melt bacon drippings in heavy skillet. Add beans and cool and stir until beans have turned dark and are crisp around edges. Turn heat then spread beans over bottom of skillet and add cheese. Stir gently until cheese melts. Serve with chopped green onions.
