Calico Bread

- 1/2 pound bulk pork sausage
- 3/4 cup chopped green pepper
- 1/2 cup chopped onion
- 1 cup all-purpose flour
- 1 cup enriched corn meal
- 1 tablespoon baking powder
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 can (8 ounce) cream style corn
- 3/4 cup milk
- 2 eggs, beaten
- 1/4 cup vegetable oil
- 1 cup (4 ounce) shredded cheddar cheese
- Brown meat, 1/2 cup green pepper and onion in 10-inch skillet; drain.
- Combine flour, corn meal, baking powder, sugar and salt; add combined remaining green pepper, corn, milk, eggs and oil, mixing just until moistened.
- Spread into greased 9-inch square baking pan.
- Sprinkle meat mixture evenly over batter.
- Bake at 4250F about 30 minutes or until wooden pick inserted in center comes out clean.
- Sprinkle cheese evenly over top; continue baking about 5 minutes or until cheese is melted.
- Serve warm. Makes 4-6 servings. Serve with soup and salad.
