Calico Bread

  • 1/2 pound bulk pork sausage
  • 3/4 cup chopped green pepper
  • 1/2 cup chopped onion
  • 1 cup all-purpose flour
  • 1 cup enriched corn meal
  • 1 tablespoon baking powder
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 can (8 ounce) cream style corn
  • 3/4 cup milk
  • 2 eggs, beaten
  • 1/4 cup vegetable oil
  • 1 cup (4 ounce) shredded cheddar cheese
  1. Brown meat, 1/2 cup green pepper and onion in 10-inch skillet; drain.
  2. Combine flour, corn meal, baking powder, sugar and salt; add combined remaining green pepper, corn, milk, eggs and oil, mixing just until moistened.
  3. Spread into greased 9-inch square baking pan.
  4. Sprinkle meat mixture evenly over batter.
  5. Bake at 4250F about 30 minutes or until wooden pick inserted in center comes out clean.
  6. Sprinkle cheese evenly over top; continue baking about 5 minutes or until cheese is melted.
  7. Serve warm. Makes 4-6 servings. Serve with soup and salad.
